A quick meal - July 29th, 2011

I've settled down a bit. In December I moved from Denver to Chicago and rented a town home in Kilbourn Park. This summer I have been curing, pickling and smoking. I also have a small garden on the balcony. After returning from a trip to Manhattan on Friday I prepared a simple meal consisting of roast chicken, corn and quick pickles. Thomas Keller's approach to chicken is great... I used a cast iron skillet and thyme from the garden. The leftover chicken went into a pot for stock the next morning. I will be trying to cook as much fresh corn as possible before the season passes - I saw this recipe in a magazine that I bought for the plane - it's great. The pickles are simply some fresh cucumber slices tossed with about a tablespoon each of kosher salt and sugar set in the fridge for 10 minutes.
